Dreaming of cookies? This late-night cookie shop is coming to Peoria

When other people are counting sheep, are you craving cookies?

If so, you will soon be in luck. A new late-night cookie shop is on its way to Peoria.

Insomnia Cookies is working to open across from Bradley University in the Campustown Shopping Center. The new shop will fill the unit that was previously home to Bard Optical.

The chain is known for its late night cookie deliveries. According to details on the coming soon page, the Peoria store expects to be open until midnight and 1 a.m. − depending on the day. 

Currently, the closest Insomnia Cookies storefront is situated more than 35 minutes away in Normal. The coming soon page for Peoria lists a location in Champaign – which is more than an hour and 20 minutes away by car.

Insomnia Cookies also offers nationwide shipping on cookie boxes, according to its website.

Founded out of a Pennsylvania dorm room in 2003, Insomnia Cookies has grown to more than 250 locations across the U.S.

The online menu for the Normal storefront − situated at 117 E. Beaufort St. − lists classic and deluxe cookies, which include:

  • Chocolate chunk
  • Double chocolate mint
  • Snickerdoodle
  • Oatmeal raisin
  • S’mores
  • Salted caramel
  • Chocolate peanut butter cup

Various vegan options are also available. Customers will also find cookie cakes, brownies and ice cream, according to the online menu.

No opening date has been announced, but a job listing for store operations manager notes that the opening is expected this summer.

Recently, Insomnia Cookies was ranked No. 4 in the best dessert/treat chains category of the USA TODAY 10Best Readers’ Choice Awards.
